Ingredients

  • 1/2 - onion, sliced
  • 1 packet - baked tofu (instead of meat)
  • 1/2 packet - egg noodles
  • 1 tsp - cumin seeds
  • 1/2 tsp - turmeric powder
  • 1 tsp - fennel seeds
  • A few cloves
  • 1 - bay leaf
  • 1 - anise
  • A few sprigs of cilantro
  • Ground pepper and salt to taste
  • 1 tsp - canola oil

How to Make Thukpa

  • Heat a non-stick pan and in 1 tsp of canola oil, saute all the ingredients except cilantro and egg noodles.
  • Add 3 cups of vegetable stock or water. Bring it to a boil and add the noodles.
  • Once soft, add salt and plenty of pepper and garnish with cilantro.
