  • 200 g - tomatoes
  • 1 cup - vegetable stock
  • 50 g - capsicum
  • 50 g - grated cheese
  • 2 tbsp - coriander leaves
  • /12 tsp - pepper powder
  • 1 tbsp - oil

How to Make Tomato and Capsicum Soup

  • Bake the capsicum in the oven or grill over a flame till the skin becomes black. Remove the skin and cut into fine pieces.
  • Heat the oil and saute the onions. Mix the tomatoes and salt and let it boil for a while.
  • Blend the onions, tomatoes, capsicum and make a thick puree.
  • In a saucepan, put the vegetable stock, pepper powder and the puree and mix. Keep stirring for a while.
  • Garnish with cheese and coriander leaves.
