Ingredients

  • 2 onions
  • 2 cloves of garlic
  • 5 cm. piece of ginger, peeled and grated
  • 500 gms. lean mixed steak
  • 2 eggs
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • Salt and finely ground black pepper to taste
  • 40 ml. chicken stock
  • 20 ml. tomato puree
  • 2 tbsp. mango chutney
  • 1 tbsp. honey

How to Make Tomato and Coriander Meatballs

  • Chop the onion, garlic and ginger in a processor until finely diced.
  • Add the beef, chutney, spices and half of the fresh coriander.
  • Mix for 30 seconds and then add the egg.
  • Mix again for one minute or until the mixture is blended.
  • Shape into small balls and place a shallow microwave dish cover.
  • Cook on high for 6 minutes re-arranging once during cooking.
  • Leave to stand with the cover on while you prepare the tomato sauce.
  • Put the tomato sauce, honey and chicken stock in a bowl, season with salt and pepper, stir.
  • Microwave on high for 2-3 minutes or until the sauce is thickened.
  • Return the meatballs to the microwave and cook on high for 1-2 minutes to heat through.
  • Either pour the sauce over the meatballs or serve in a separate jug.
