Ingredients

  • 6 - tomatoes, chopped (medium size)
  • 2 -onions, big
  • 4 - cloves
  • 1 cup - Basmati rice
  • 10 - mint leaves
  • 5 - broken cashew nuts
  • 3 tbsp - oil
  • 2 tsp - ghee
  • For grinding:
  • Ginger - 1 inch piece
  • 7 flakes - garlic
  • 6 - cloves
  • Cinnamon - 1 inch piece
  • 1/2 - onion (chopped)
  • 4 pieces - coconut
  • 10 - red chillies
  • 3 - pepper

How to Make Tomato Mint Rice

  • Wash and soak rice for 10 mins.
  • Drain water and fry for 2 mins in 1 tsp of ghee.
  • Heat oil, add broken cashewnuts, cloves and onions, till the onion becomes light brown.
  • Add chopped tomatoes and fry till it becomes soft.
  • Add ground mixture and fry for 2-3 mins.
  • Add fried rice and mix it well.
  • Add 2 cups of hot water and allow it to boil for 3 mins.
  • Add mint leaves, cover the lid and pressure cook for 5 mins.
