A unique refreshing salad recipe with a fine assortment of pineapple, cubed chicken pieces and other healthy ingredients stuffed into red, juicy tomatoes. A wholesome salad packed with high nutritional value that makes a great meal. 

Chicken, pineapple pieces, celery, almonds and green pepper are mixed and stuffed into the tangy tomato. This unique salad is ideal for those who love innovative salad combos. For the dressing, combine flour, sugar, salt, pineapple juice, egg yolks and lemon juice. Chill and then add whipping mixture onto it. 

This complete dressing mixture is then spooned over the stuffed tomatoes for an added highlight!

  • 4 cups cooked cubed chicken
  • 2 cups pineapple chunks
  • 1 cup sliced celery
  • ½ cup slivered almonds
  • ½ cup chopped green pepper
  • 2 medium red tomatoes
  • For Dressing:
  • 3 tbsp. sugar
  • ¼ cup flour
  • ½ tsp. salt
  • ¼ cup pineapple juice
  • 3 egg yolks
  • ¼ cup lemon juice
  • 1/3 cup instant non fat dry milk powder
  • 1/3 cup ice water

How to Make Tomato, Pineapple and Chicken Salad

  • Combine chicken, pineapple chunks, celery, almonds and green pepper, tossing well. Cut each tomato into 4 sections, cutting part way down.
  • Pull apart slightly. Stuff tomatoes with chicken salad and arrange on lettuce lined serving dish. Chill.
  • For Dressing: Combine sugar, salt and flour in a saucepan and add pineapple juice gradually mixing well. Cook over low heat, stirring until thickened.
  • Beat egg yolks in a bowl and add small amount of cooked mixture to the egg yolks. Return this to the remaining mixture in saucepan.
  • Cook for 3 minutes stirring constantly until smooth. Remove from heat and add lemon juice. Chill.
  • Add dry milk powder to 1/3 cup iced water and whip until stiff. Fold into dressing. Spoon dressing over stuffed tomatoes.
  • Note: Try an orange flavor too. Orange slices can be used instead of pineapple chunks and orange juice instead of pineapple juice.
