Ingredients

  • 1/2 cup - fenugreek leaves
  • 1/4 cup gram flour
  • 1 cup - wheat flour
  • 30 g - boiled yam
  • 30 g - boiled lotus stem
  • 30 g - boiled sweet potato
  • 30 g - boiled beans
  • 30 g - boiled carrots
  • 30 g - boiled raw banana
  • 30 g - deep fried potato
  • 2 - deep fried eggplant
  • 2 tbsp - chopped onion
  • Ginger garlic paste
  • 1 tbsp - red chilli paste
  • 1/2 tbsp - green chilli paste
  • Coconut and coriander seed paste
  • 1 tsp - cumin powder
  • 1 tsp - coriander powder
  • 1/2 tsp - garam masala powder
  • 1/2 tsp - turmeric powder
  • 1 tsp - cumin seed
  • Sugar and salt to taste
  • Oil

How to Make Traditional Undhiyu

  • For dumpling, mix fenugreek leaves, turmeric powder, red chilli powder, gram flour, wheat flour, hot oil and salt.
  • Make small balls and deep fry fenugreek dumpling.
  • In a pan, heat oil, add whole jeera.
  • When it crackles, add chopped onion, saute till golden brown.
  • Add ginger-garlic, red chilli and green chilli paste, saute for 2 minutes.
  • Add coconut and coriander paste, cook for 2.5-3 minutes.
  • Add vegetables and toss with coriander, cumin and garam masala powders.
  • Add water, salt, sugar and cook for 2 minutes, correct seasoning.
  • Top with fried fenugreek dumplings and chopped coriander.
