  • 3 ripe bananas, large
  • 1 tin (450 g) - cherries
  • 250 ml - milk
  • 1/3 cup - powdered sugar
  • 100 ml - orange juice
  • 2 tbsp - lime juice
  • 6 tbsp - golden syrup or honey
  • a pinch of salt
  • 1 egg white
  • 2 tbsp - grated orange rind
  • lime slices and mint springs to garnish

How to Make Tropical Banana Freeze

  • Mash the bananas with lime juice.
  • Add orange juice, golden syrup or honey and salt. Mix well.
  • Beat the egg white till frothy.
  • Add the sugar little at a time, beating well after each addition.
  • Fold this into the banana mixture.
  • Drain the cherries from the syrup.
  • Remove the stones and chop finely.
  • Mix with orange rind and add to the banana mixture.
  • Pour the mixture in shallow containers and place in freezer.
  • When it is half set, remove from freezer and whisk till light. Return to freezer.
  • Transfer to refrigerator shelf 15 minutes before serving.
  • Scoop into goblets and serve with lime slices and mint sprigs
