  • 225 gms. macaroni
  • 2 small tins of tuna in brine
  • 225 gms. cottage cheese
  • 100 gms. cheddar cheese
  • 225 gms. courgettes
  • 100 gms. tomatoes, chopped
  • Salt and freshly ground black pepper to taste

How to Make Tuna, Cheese and Macaroni

  • Place the macaroni in a microwave proof bowl.
  • Pour over ½ litre of water, add a pinch of salt; cover with a lid or cling wrap.
  • Cook on microwave high for 7 minutes.
  • Remove and leave to stand while you prepare the other ingredients.
  • Mix the tuna, cottage cheese and about 2/3rds of the cheddar in a bowl. Season with salt and black pepper.
  • Slice the courgettes in thin rings and line the bottom of a casserole dish with 1/3rd of the courgettes.
  • Pour over half of the tuna mix. Drain the macaroni and spoon half of it over the tuna.
  • Repeat the layers finishing with a layer of courgettes.
  • Chop the tomatoes slightly and arrange on the top of the dish.
  • Cover with a lid or cling film and microwave on high power for 12 mins.
  • Remove cling film and sprinkle with the rest of the cheddar cheese.
  • Microwave on high for 1-2 minutes until cheese is melted and is crispy brown in colour.
