Ingredients

  • 450 gms. turkey breast, skinned
  • 25 gms. butter
  • 1 medium onion, skinned and chopped
  • 25 gms. plain flour
  • 300 ml. milk
  • 100 gms. mushrooms, sliced
  • Salt and pepper to taste
  • Pinch nutmeg
  • Pinch ground ginger
  • 150 ml. natural yoghurt
  • 2 egg yolks
  • Freshly grated nutmeg
  • Small piece root ginger, finely grated
  • few lemon slices, chopped fresh

How to Make Turkey with Mushrooms

  • Cut the turkey into 2.5 cm (1 inch) cubes and put them into a small roasting bag.
  • Loosely tie the end of the bag with a plastic tie or rubber band.
  • Microwave on high for 6 mins. or until turkey is cooked.
  • Place the butter in an ovenproof casserole dish and microwave on high for 45 seconds until it is melted, then stir in the onion.
  • Cover with a lid or cling film, pulling back one corner to vent.
  • Microwave for 5-6 minutes or until the onion softens.
  • Stir the flour into the onion and microwave for 1 minute, gradually stir in the milk and microwave for a further 45 seconds, then whisk.
  • Continue to microwave for nearly 2 mins, whisking every 30 seconds until the sauce is boiling.
  • Add the turkey and any juices left in the roasting bag and the mushrooms to the sauce, season well with salt, pepper, nutmeg and ginger, microwave for a further 2-3 minutes, stirring once.
  • Blend the yoghurt and eggs together until smooth and stir into turkey mix.
  • Microwave for nearly 2 mins until very hot but not boiling, stirring two to three times during the cooking time.
  • Serve garnished with lemon slices and parsley.
