  • 1 cup sprouted val (beans)
  • 1 tsp. chilli powder
  • 3 green chillies
  • 1 tsp. turmeric powder
  • 10 curry leaves
  • ½ cup scrapped coconut
  • ½ tsp. mustard seeds
  • A pinch of asafoetida
  • 1 tsp. grated jaggery
  • 1 tsp. cumin seeds
  • 5 kokums
  • ½ tsp. cumin seeds
  • ¼ tsp. coriander leaves
  • 4 tbsp.oil
  • Salt to taste

How to Make Valache Birde(Sprouted Beans in Coconut Gravy)

  • Remove the skins of the beans and clean.
  • Heat oil, add mustard seeds and half the cumin seeds.
  • Then add asafoetida, curry leaves and chillies slit lengthwise.
  • Add turmeric powder, chilli powder and saute for few seconds.
  • Add val and water. Add jaggery and salt and cook till beans are soft.
  • Grind coconut with remaining cumin seeds and add to the mixture.
  • Add water if needed. Add kokum and cook.
  • When ready, add chopped coriander leaves.
  • Serve hot with chappatis or rice.
