  • 2 cups - flour
  • 125g - butter or margarine
  • 3/4 cup - castor sugar
  • 2/3 cup - milk
  • 2 - eggs
  • 1 tsp - vanilla essence
  • a pinch - salt
  • For the icing:
  • 3 cups - icing sugar
  • pink food colouring
  • hot water to mix
  • To decorate: icing sugar with green colouring
  • glace cherries
  • glace pineapple

How to Make Vanilla Cupcakes with glace cherries & Pineapple

  • Beat butter, sugar, and vanilla essence till light and fluffy.
  • Add eggs one by one, beating well after each addition.
  • Add the sieved ingredients (flour and salt) to the creamed mixture alternately with milk. Combine well.
  • Spoon mixture into greased patty pans.
  • Bake at 180 degree C for 15 minutes, or until golden brown.
  • Remove from oven and cool on wire rack.
  • Sift icing sugar, colour, and water to make a smooth consistency.
  • Immediately spread on each cake and decorate with piped green icing, pineapple, and glace cherries.
