  • 3 cups mixed vegetables (potato, carrot, beans, cauliflower)
  • 1 cup onion, finely chopped
  • 1 cup grated coconut
  • 1.5 cups of green peas, shelled
  • 1.5 tsps turmeric powder
  • 6-8 dry red chillies
  • 2 tsps coriander seeds
  • 2 tsps poppy seeds
  • 2 pieces cinnamon
  • 2 cm pieces of ginger
  • 8 cloves, garlic
  • 3 tbsps coriander leaves, chopped
  • 1 tbsp roasted bengal gram
  • Salt to taste
  • 3 cloves
  • 3 tbsps oil

How to Make Vegetable Saagu

  • Cook vegetables with 2 cups of water, salt and turmeric.
  • Dry roast chillies, coriander seeds, poppy seeds, cloves and cinnamon. Powder them together.
  • Grind ginger, garlic, coriander leaves, coconut and roasted gram together to a fine paste.
  • Heat the oil and fry the onions till golden brown.
  • Add the ground paste and fry for 2 mins.
  • Add the powdered masala and 1 cup of water and allow it to simmer for 5 mins.
  • Add the cooked vegetables and let it simmer for 3 more mins.
