  • 1 - onion chopped in half rings
  • 1 - tomato, chopped
  • 12 to 13 - florets of cauliflower
  • 1 - carrot, finely chopped
  • 1/2 cup - Peas
  • 1/2 cup - boiled macaroni
  • Oil
  • Salt and black pepper as per taste
  • 1/4 tsp - ginger garlic paste
  • A little corn flour mixed in water
  • Chilli sauce

How to Make Vegetable Soup

  • Take a cooker/covered vessel, add onion rings and ginger garlic paste to fry.
  • Meanwhile, blanch all the vegetables in salted boiling water for 3-4 mins.
  • When onions are golden brown, put half the parboiled vegetables in it. Saute for 2-3 mins, add 3 cups water and then cook this mixture for 10 mins (covered) or if in cooker, till 3 whistles.
  • If you like your soup thin, you can sieve the mixture. If you like it thick, blend the cooker mixture in a mixi for 30 seconds.
  • Put the blended/sieved mixture in a pan on the fire.
  • Add salt and pepper.
  • Now add the macaroni and the other half of boiled vegetables to this.
  • Add a little water if required.
  • Simmer on low fire for 5 mins, add chilli sauce and stir gently.
  • Add the corn flour in water 2 mins before serving.
