Ingredients

  • 1 cup - tamarind extract
  • 10 - shallots
  • A few - garlic cloves
  • 1 tbsp - fenugreek seed
  • 1/2 tsp - mustard
  • 1/2 tsp - urad dal
  • A few - curry leaves
  • 1/4 cup - gingili oil
  • Salt to taste
  • To roast and grind:
  • 1 - dry ginger
  • 3 tbsp - coriander seeds
  • 15 - black peppercorns
  • 1 tsp - cumin seeds

How to Make Vendhaya Milagu Kuzhambu - Fenugreek Pepper Gravy

  • Dry roast and grind all the ingredients to a fine powder.
  • Heat gingili oil in a heavy bottomed pan, add the mustard seed and urad dal, let it splutter.
  • Add the fenugreek seeds, fry it.
  • Add the shallot pieces, curry leaves and garlic pods to the oil, fry well.
  • Add the prepared spice powder and salt to tamarind extract and mix well.
  • Add it to the cooking vegetables, cook them for 20 to 25 mins in medium flame with the lid
  • Once the oil separates from the kuzhambu remove from stove.
  • Serve hot.
