  • 1 kg pack - MTR pre-roasted vermicelli
  • 5 - green chillies
  • 1 big cup - chopped onion
  • 1/2 cup - chopped tomatoes
  • 5 tbsp - carrots, grated
  • 1/4 cup - capsicum, chopped
  • 1 cup - grated coconut
  • 6 tbsp - chopped coriander
  • 2 tbsp - curry leaves
  • Salt - to taste
  • 8 tbsp - oil
  • For seasoning: Turmeric powder, urad dal, channa dal, mustard, jeera and hing

How to Make Vermicelli Delight

  • Heat oil in a kadai and add the seasoning.
  • Let them splutter, then add the curry leaves and fry for a minute.
  • Add the onion, fry for 2 mins. Then add the carrot, capsicum and let it cook for a couple of minutes.
  • Add the tomatoes and fry them a little till they blend.
  • Add enough water, salt and let it boil.
  • Add the roasted vermicelli and toss well.
  • Cover and cook on low heat.
  • Let the vermicelli and vegetables cook on low heat.
  • After it is done, stir in the coconut and garnish with chopped coriander.
