  • 1 ¾ cups wholewheat flour
  • ½ cup all purpose flour
  • 1 tsp. baking powder
  • 1 ¼ cups milk
  • 1 egg, beaten
  • 2 tbsp. honey
  • 1 ¼ cups blueberries
  • 2 tbsp. coconut oil
  • ½ cup lemon curd or lemon flavoured yoghurt
  • 2 tbsp. honey

How to Make Wholewheat Blueberry Pancakes with Lemon Yoghurt

  • Sift the flours and baking powder into a large bowl, then make a well in the centre.
  • Mix together the milk, egg and honey in a small bowl.
  • Then pour in the dry ingredients and whisk until mixed.
  • Stir in 1 cup of the blueberries.
  • Heat the oil in a large skillet, then drop 2 tbsp. of the batter into the skillet for each pancake to form 4 and cook for 4-5 minutes, until golden.
  • Then turn over and cook for another 2-3 minutes.
  • Remove from the skillet and keep warm.
  • Repeat with the remaining mixture to make about 12.
  • Serve the pancakes with spoonfuls of the lemon yoghurt, sprinkled with the remaining blueberries and drizzled with honey.
