Ingredients

  • For Yakhni:
  • 1 kg - mutton
  • 2 long pieces of cinnamon
  • 4 cloves
  • 6 pods garlic
  • 3 green chillies
  • 4 grains black pepper
  • 10 cups - water and salt to taste
  • For Rice:
  • 250 gms - rice
  • 3 sliced onions
  • 2 tbsps - turmeric powder
  • 1 tbsp - cumin seeds
  • 1 long cinnamon
  • 4 whole cloves
  • 2 cardamoms whole
  • 3 bay leaves
  • 1 tsp - chilli powder
  • 8 tbsps - ghee
  • 4 large silver foil

How to Make Yakhni Chawal Jehangir

  • Wash well and cut up meat.
  • Place all the ingredients in a vessel and bring them to boil.
  • Simmer gently till meat is cooked.
  • Remove the meat from the broth and keep aside
  • Wash and soak rice.
  • Fry onions to a golden brown colour.
  • Add spices and fry them.
  • Add soaked rice and fry for a short while.
  • Add broth and let the rice cook.
  • When the rice is half cooked, add the meat, cover with rice and cook on a slow fire until fully cooked.
  • Serve hot with curry or raitas, garnished with silver foil.
