  • 1/4 Kg - yellow pumpkin
  • 1 tbsp - grated coconut
  • 1 tsp - powdered jaggery
  • 1 tsp - mustard seeds
  • 4 - dry chillies
  • A pinch of asafoetida
  • Salt to taste
  • Oil to fry

How to Make Yellow Pumpkin Curry

  • Cut the yellow pumpkin into small pieces.
  • Heat oil in a kadai. Add the mustard seeds and allow it to splutter.
  • Add the dry chillies and asafoetida.
  • Add the yellow pumpkin and cook for 3-4 minutes.
  • Add the jaggery, coconut and salt.
  • Serve hot with rice and sambar.
