Ingredients

  • 1.25 cups - natural (plain) yoghurt
  • 1.25 cups - single (light) cream
  • 2 - green chillies
  • 1 - onion, chopped
  • 1 small piece - ginger root
  • 4 - cloves garlic
  • 2 tbsp - ghee
  • 1 tsp - cumin seeds
  • 1 tsp - mustard seeds
  • 2 to 3 - curry leaves
  • 1/2 tsp - ground turmeric
  • 2 - tsp sugar
  • Salt
  • 1 tbsp - chopped fresh coriander

How to Make Yoghurt Soup

  • Puree the chilli, onion, ginger and garlic.
  • Heat the ghee and fry the cumin, mustard seeds and curry leaves until the seeds start crackling.
  • Fry turmeric and puree until brown.
  • Add the yoghurt and cream and season to taste with sugar and salt.
  • Whisk over gentle heat until the soup comes to a boil.
  • Serve garnished with fresh coriander.
