Ingredients

  • 250 g - ash gourd
  • 250 g - pumpkin
  • 250 g - sweet potato
  • 250 g - gherkins
  • 250 g - cow peas (long beans)
  • 250 g - ridge gourd
  • 8 - 10 - green chillies
  • 2 tbsp - rice flour
  • 1 tsp - sugar, optional
  • 2 - coconuts, grated (thick and thin milk extracted)
  • salt
  • For seasoning:
  • 2 tbsp - oil or ghee
  • 1 tsp - mustard
  • 1 tsp - cumin
  • curry leaves

How to Make Yogi Rathna

  • Cut all the vegetables into thick strips. Cook them with slit green chillies in thin coconut milk. Add salt, simmer for 2 minutes.
  • Mix rice flour with thick coconut milk and add to the vegetables.
  • Just as it begins to boil, remove from fire.
  • Prepare seasoning with oil or ghee, mustard, cumin and curry leaves.
  • Add to the vegetables.
  • Add sugar if desired.
