Ingredients

  • For Vadai:
  • Urad dal (White) - 1.5 cups
  • Green chilli - 2
  • Red chilli - 6
  • Salt
  • Hing - 2 pinches
  • Water
  • Curry leaves
  • For Thayir:
  • Thick fresh curd - 4 cups
  • Salt
  • Grated coconut - 2 handfuls
  • Green chillies - 2
  • For Garnishing:
  • Grated carrot, Coriander leaves
  • Pepper powder - a pinch (optional), Chat Masala powder - a pinch (optional)

How to Make Yummy Thayir Vadai

  • Soak urad dal for 1.5 hours in lots of water. Meanwhile, beat curd well.
  • Grind grated coconut, green chillies in mixie to paste.
  • Mix the above paste to the curd and add little salt.
  • Refrigerate the above.
  • After 1.5 hrs, wash dal several times with water and allow water to drain for sometime. Then grind dal to smooth paste adding very little water.
  • Heat oil. Prepare and fry vadas as usual.
  • When the vadas are fried, immediately drop them into a vessel containing warm water.
  • After 5 mins, take the vadas form warm water and drop them into the refrigerated curd.
  • Prepare all this well in advance, since thayir vadai tastes good only when the vadai absorbs the curd well.
  • Just before serving, remove from fridge and garnish.
