Ingredients

  • 2 cups - basmati rice (or long grained rice)
  • 1 cup - sugar
  • 2 cups - water
  • 1/2 cup - milk
  • 3 - cloves
  • 2 inch - cinnamon stick
  • 3 - green cardamoms
  • 3 tsp - ghee
  • 6 -- pistachios
  • 6 - almonds
  • Few - saffron strands
  • Pinch - yellow food colour

How to Make Zarda -Kashmiri Sweet Rice

  • Wash and soak the rice for 15 minutes.
  • In a pan, take sugar with enough water to cover it, and make a sugar syrup.
  • In a heavy bottomed pan, heat the ghee, add the cinnamon, cloves and cardamom.
  • Fry for few minutes.
  • Add the drained rice and 2 cups of water.
  • Once the water starts drying, add the sugar syrup, milk, yellow food colour and saffron strands.
  • Cover and cook on simmer.
  • Heat a teaspoon of ghee and roast half the nuts.
  • Add it to the cooking rice.
  • Once the rice is cooked, take off the heat.
