Ingredients

  • 1/4 cup clarified butter
  • 1/2 cup sugar
  • 1/2 tsp-ground cardamoms
  • 1/2 tsp-ground cinnamon
  • 2 tbsp-whipping cream
  • 1/4 tsp-saffron dissolved in 1 tbsp. warm milk
  • 2 tbsps-cashew nuts
  • 1 tbsp-pistachio nuts
  • 2 tsp-pure ghee
  • 1.5-cups Rice
  • 1 and 3/4th cups water
  • 1 cup milk
  • Pinch of salt

How to Make Zarda (Sweet Rice)

  • Heat 1/4 cup butter and fry cardamom and cinnamon for a minute or two
  • Add rice and fry for 2 to 3 minutes
  • Bring water to a boil. Add rice, stir and cover tightly
  • When rice is half done, add milk, salt and sugar
  • Cover and continue cooking
  • When rice is done, mix in the whipping cream and saffron dissolved in the milk
  • Saute the nuts in 2 tsp. ghee and garnish with rice
