Ingredients

  • 3 cups - Zucchini (grated)
  • 3 cups - All-purpose flour
  • 2 cups - Whole wheat flour
  • 1+1 tbsp - Active dry yeast
  • 4 tbsp - Parmesan cheese (grated)
  • 2 tbsp - Olive oil
  • Salt
  • 1 tsp - Red chilli flakes
  • Oil
  • 1 tbsp - Sesame seeds for garnishing

How to Make Zucchini - Courgette Crown Bread

  • Place the grated zucchini in a colander, sprinkle salt, toss and keep aside for a few minutes. Then pat it dry with paper towels and keep aside.
  • Mix the flours, yeast and parmesan together. Add chilli flakes.
  • Now add the zucchini, pour some lukewarm water and knead into a stiff, smooth dough.
  • Place this dough in a greased bowl and let it rest in a warm place for 1.5 hours. The dough will have doubled in size by then.
  • Knead the dough lightly, divide into 5-7 balls.
  • Arrange the balls in a pan, brush the top with milk and sprinkle sesame seeds over it. Let it sit again for 30 minutes.
  • Pre-heat the oven to 400 degrees Fahrenheit. Bake the zucchini bread for 25-30 minutes until bread crust turns golden brown.
