  • 2 cups - all-purpose flour
  • 1/2 cup - cocoa powder
  • 3/4 cup - zucchini, grated
  • 1 tsp - baking powder
  • 2 - eggs, beaten
  • 100 g - butter, at room temperature
  • 3/4 cup - sugar

How to Make Zucchini and Chocolate Muffins

  • Preheat the oven to 350 F.
  • Grease muffins moulds and line them with muffin cases.
  • Sift the flour, cocoa powder and baking powder into a large bowl.
  • Cream the butter and sugar in another vessel.
  • To this, add the beaten eggs and beat until soft and creamy.
  • Add the grated zucchini and mix.
  • Pour the wet ingredients into the flour and stir; do not over mix.
  • Pour the mixture into the greased muffin moulds and bake for 20-25 minutes, until they are golden or a skewer inserted into the centre comes out clean.
